Food Safety Supervisor CCNI

The Food Safety Supervisor course delivers two Units of Competency in the same session to satisfy the award of the NSW Food Safety Supervisor Certificate on successful completion.

SITXFSA005 Use hygienic practices for food safety
This unit describes the performance outcomes‚ skills and knowledge required to use personal hygiene practices to prevent contamination of food that might cause food-borne illnesses. It requires the ability to follow predetermined organisational procedures and to identify and control food hazards.

SITXFSA006 Participate in safe food handling practices
This unit describes the performance outcomes, skills and knowledge required to handle food safely during the storage, preparation, display, service and disposal of food. It requires the ability to follow predetermined procedures as outlined in a food safety program.

NSW Food Safety Supervisor Certificates are valid for 5 years from the date of issue.

What skills and knowledge will I gain? Expand

  • Understand that food is nationally legislated by Food Standards Australia New Zealand Act 1991;
  • Have knowledge of the Australia New Zealand Food Standards Code, developed by the aforementioned authority;
  • Are aware of the legislative requirements for a business to comply with the national standard for food safety practices and that training and certification requirements differ between states and territories;
  • Hygiene procedures;
  • Hygiene hazards;
  • Reportable personal health issues;
  • Cross contamination;
  • Hand washing;
  • Food contamination;
  • Other contamination procedures for food safety, storing food safely, preparing food safely, providing safe single use items, maintaining a clean environment and disposing of food safely.

Face-to-face training.

This price includes the NSW Food Authority fee of $30 for issue of the NSW FSS Certificate.

Who is this course for? Expand

All retail, hospitality and food service businesses need to appoint at least one Food Safety Supervisor (FSS) per premises if food they prepare and serve is:
  • ready-to-eat;
  • potentially hazardous (ie. needs temperature control);
  • NOT sold and served in the supplier's original package.

Examples of businesses include cafés, restaurants‚ quick service venues, takeaway shops, pubs and clubs with food service areas, mobile vendors, home-based businesses, caterers, motels, supermarkets selling potentially hazardous food (such as hot chickens) and outlets that sell food through third party ordering apps.

Also included are:
  • school canteens
  • children’s services that provide meals, including out of school hours care
  • supermarkets
  • delicatessens
  • greengrocers
  • coffee vendors that sell unpackaged, potentially hazardous, ready-to-eat food
  • boarding schools, and
  • correctional centres.

Minimum age to undertake the training: 16 years.

Prerequisites: Please bring current photo ID with you on the day.
